Ingredients:
2 cups sugar
4 tsp cocoa
1/2 cup milk
1 stick butter
2 TBSP peanut butter
1 tsp vanilla
4 cups quick oatmeal
Preparation:
In a medium saucepan, combine sugar, milk, butter, and cocoa.
Bring to a boil, and cook for 1 1/2 minutes.
Remove from heat
Stir in peanut butter, oats and vanilla.
Drop by teaspoonfuls onto wax paper.
Let cool until hardened.

Fingerfood Apple Pie for the Superbowl

Ingredients:
1 package refrigerator biscuit with 10 biscuits
1 Granny Smith apple, peeled and finely chopped
1/4 cup any small dried fruit (raisins, cranberries, cherries...)
2 TBSP sugar
1 tsp cinnamon
1/2 tsp nutmeg
2 1/2 TBSP butter
Preparation:
Preheat oven to 375°
Spray muffin cups with cooking spray.
Using a rolling pin, flatten each biscuit into a 3-4 inch circle.
Combine apples with dried fruit
Add sugar, cinnamon, and nutmeg.
Place 1 TBSP of mixture onto each biscuit.
Dot each with a small pat of butter.
Bring up the sides of the biscuit to enclose the filling. Pinch and twist the top to seal.
Place in greased muffin cups.
Bake for 11-15 minutes or until golden brown.
