Warm Fruit Compote for Tu B'Shvat

Ingredients:
2 cups pitted prunes or dates, sliced in half
2 cups dried pear or peach halves, sliced in half
2 cups figs, sliced in half with tips removed
1 cup golden raisins
5 - 6 cups white grape juice
2 sliced bananas
1.5 cups orange juice
3 tablespoons honey
1 tsp ground ginger or cinnamon

Proceedure:
Rinse all fruit and place into a very large glass bowl (except the banana)
Pour grape juice on top.
Sprinkle ginger or cinnamon
Place a heavy plate on top to keep fruit completely immersed under grape juice.
Cover with plastic wrap and let stand overnight in the refrigerator.
Preheat the oven to 350F.
Pour mixture into an oven-safe casserole
Arrange the sliced bananas on top.
Mix the orange juice and honey and pour over the top.
Cover and bake for one hour.
Serve warm
Option - serve with ice cream or pound cake
