Ingredients:
1 egg
1 cup sweet coconut milk
pinch of salt
1 1/2 cups flour
1 1/2 tsp. baking powder
1 cup crushed pineapple, well drained
1/2 cup finely chopped macadamia nuts
Directions:
Beat egg
Stir in coconut milk
Add other ingredients, mixing well. Do not over stir
Fry in pan or on griddle, as you would other pancakes.
Top with a dusting of confectioners' sugar.
Serves 4-6.
